Brown Rice & Sesame Dressing
This is one of my favourite summertime salads. It keeps well for days and travels well for parties!!
The veggies are versatile and I change them almost everytime I make this salad. You really just need crunch for veggies, and white rice can be substituted for the brown, although you'll reduce the fibre and vitamin E if you do. No one really notices the brown rice since the dressing is the winner here. The sesame oil is a MUST for flavour.
DRESSING: Mix the following ingredients and add to the salad below.
3 Tbsp Sesame Oil
2 Tbsp Tamari (or soy sauce)
2 Tbsp Fresh Orange Juice (half an orange)
2 Tbsp Apple Cider Vinegar
1 Tbsp Orange Zest
2 mined Garlic Cloves
2 Tsp finely minced Fresh Ginger
I cup chopped celery
I red bell pepper, diced
2-4 green onions, chopped
3 cups cooked brown rice
1/2 cup peanuts, toasted
1/2 cup cashews, toasted (or 1 cup of any nuts you prefer)
2 Tbsp sesame seeds, toasted (or hemp hearts)
1/3 cup raisins or currants
1 cup snow peas, trimmed and blanced
I cup bean sprouts
Feel free to change the salad ingredients to suit you and your family. Enjoy!
Add any veggies you like...I didn't follow my own recipe
I substituted grated carrots and cauliflower for the peppers and snow peas and switched the nuts to toasted walnuts and pumpkin seeds.
