When I was little my Mom would leave out leftover pancakes after school and we'd eat them for a school snack. I used the same idea for our left over pancakes and here our leftover waffles.
I melted chocolate chips and a tablespoon of coconut oil and dipped the sections of waffles.
Use the recipe below for your pancakes or waffles. It's super versatile. Leftovers freeze well in a ziplock bag too. Just separate each waffle or pancake with a piece of parchment paper.
1 cup flour (whole spelt or a gluten free mixture)
1 tsp baking power
1 tsp baking soda
1/2 tsp salt
Mix the above dry ingredients in a bowl and add the following wet ingredients until well mixed.
1 tbsp maple syrup (optional)
3 Tbsp of melted butter or coconut oil
1/2 cup plain or vanilla yogurt (optional)
1/2 cup milk (add more if not using yogurt)
Cook on buttered frying pan as pancakes or in oiled waffle press. Enjoy.
