Ready for a 3 ingredient snack/cheese cracker that is so tasty, it’s not just for the kids anymore?  Not only do you get to control the heart healthy whole grains… but you can choose what kind of cheese goes into these yummy cheese bites.

The dough takes minutes to assemble in a food processor and keeps chillin’ in the fridge for days.  When you’re ready to roll the dough you’ll have a quick snack and a kids activity all ready to go.  The only downside…is that they taste so good you can’t stop!

Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper or use a seasoned baking stone.

Not all flour is equal ! We use whole spelt flour in our recipes

Spelt flour is an ancient grain and is water soluble.  It mixes quickly and is sometimes more easily digested for people with wheat sensitivities.  Like me!

In a food processor blend:

  • 2 cups grated cheddar cheese (or your favourite cheese)
  • 1 cup whole spelt flour
  • 4 tbsp grass fed butter

Mix on high for a minute, until well blended.  Add cold water, 1 tbsp at a time until you get a dough ball.  About 2-5 tbsp of water.

Wrap and chill dough for 2 minutes

Roll dough onto a lightly floured surface until quite thin.   Cut into shapes, just like rolled cookies!

Bake in preheated oven until crispy. Time depends on thickness of dough but about 15 minutes.

I highly recommend you double or triple batch the dough.
